Watermelon Crouton and Pak Choi
Serves 10 Canapes
If you happen to like scallops, watermelon and pak choi. And, you find yourself with some croutons spare. Then this recipe is right up your street.
You will need:
- Five Large Scallops
- Ten Seedless discs of Watermelon
- Four Leaves of Pak Choi
- One tsp Poppy seeds
- Season to taste
Season & sear King Scallops, cut out watermelon, blanch Pak Choi leaves and cut into thin strips.
Cut King Scallops horizontally in half, place on watermelon, wrap in Pak Choi, sprinkle with Poppy seeds
